2/16/2022 - Belize - Country #24

I'm really enjoying these South American countries. They're close to home (literally) and the tastes of their cuisines are familiar to flavors I've enjoyed throughout different times of my life. So, come join me in Belize! :D Let's see what I'm eating today:



I was originally going to make a bunch of stuff for Belize, but I scaled back. This blog is taking a lot out of me, folks, even more'n I thought it would. I should've known that. But anyways, I just made a simple dish that I found upon researching What to eat in Belize: Top Belizean foods to try! (belizeadventure.ca). I ended up making How to make Belizean Garnaches – Belize Adventure from that same website (veggies on tortillas, basically, lol). They aren't called garnishes or ganaches - tis garnaches.


So simple and so good. Here's how I made them:



Ya get out all your ingredients out.



Cook off the onions and add the refried beans. Then cut up your cabbage, tomato, and cilantro and mix that together. I couldn't find shredded gouda cheese, so I did the only thing I could think to do: julienne some gouda slices, lolz. #improv


Then you put a layer of refried beans on a tostada and then the veggie mixture on it.


Done!!!


MONEYSHOT!!!


Twas just yummy, y'all. Crunchy from the corn tostada - the refried beans and cheese added some fat against the tomato and cabbage crunch and the cilantro freshness. It was just .... plain ol' yummy.

Would I make it again? 8.5/10, definitely. So fast and easy and healthy and tasty and uncomplicated - it was just a nice break from all my heavy cooking, lol
