2/4/2022 - Bermuda - Country #19

We're back in the Islands - and I'm giving you another dish that reminds you of the holidays. Instead of a boozy cake, I'm making a New Year's favorite - Hoppin' John.



I've had Hoppin' John exactly once before - about a month ago. My brother made it on New Year's Day for lunch and it was just - it was just so good, y'all. I'm quickly learning that sometimes the best things in life are beautifully seasoned pots of rice.


My research on Bermuda's food led me to Bermuda's Cuisine: Local Specialties, Fish & Seafood // Go To Bermuda and I chose to make Southern Hoppin' John Recipe: How to Make It (tasteofhome.com) (blackeye peas, bacon, veggies, and rice). I made the same recipe my brother made because if it ain't broke, don't fix it!!!

I'm a firm believer in crispy bacon - almost burnt is my preference for brownness!



The crispy bacon was removed and the veggies all cooked up in its fat. Everything else was plopped all in and cooked off until the rice was done.

I just...enjoyed this Hoppin' John so much. The simple homey flavors remind me of the South. Rice was cooked perfect, the veg soft and sweet, the bacon crispy, all just a little spicy. I just kept eating it and eating it and eating it. It is so comforting and tasted AWESOME next day.
