You know how a song that you heard on a Shrek soundtrack is now and forever and always a 'Shrek song'? I feel that same way when it comes to places Survivor has been. 'Survivor: Cook Islands' comes to mind immediately when I see that I'm making Cook Islands.

I think I straight up googled 'cook islands recipes' and found Cook Island Recipes - The Migrating Kitchen Trust. I made sapu soi (Asian noodle stir fry, baby!). I love a good Asian stir fry. Nothing is more comforting or homey.
The making of this meal coincided with a wonderful girls' night. I mixed up the sapu soi while talking with my sister and sister-in-law as we gathered in for some Asian food and a rom-com (My Big Fat Greek Wedding, 10/10 - LOVED IT).
First, you gather your ingredients. Then you pour hot water into the rice noodles to cook them - just a couple minutes, though; then rinse them under cold water to stop the cooking. They're very thin and delicate and cook fast.
While the rice noodles cooked, I got distracted by hot goss and forgot to take more pictures. Cut up chicken and cooked it with aromatics and mixed veggies and Asian sauce ingredients, as you do. Then mix it up - real good!!! (Credit to that one TikTok account with the mom-and-daughter and their cooking phrases.)
It looks so good!!! But we didn't eat it immediately!!! We put it by the hot stove and dove into my sister's car for a spur-of-the-moment adventure to pick up a LEGO carousel for another sister a couple of miles away. We were sporadic and here for it.
This was just...so yummy. Slurpy noodles with hints of soy and sesame; tender chicken, al dente veggies, and the fun addition of using chopsticks. The food was good, but the company was better. (That said, we eat the whole bowl. No judgement is allowed on Girls' Night, thank you.)
