Cyprus was fun - and dubbed his favorite meal so far by my boyfriend. I declare that a victory - especially since he doesn't like pasta very much, lol.
I looked up on Traditional Cypriot Foods You Should Try (theculturetrip.com) and decided to make Makaronia Tou Fournou - Cypriot Recipe | 196 flavors (pasta and bechamel (cream sauce) and spiced pork all baked together!)
Fun fact: I got to buy halloumi for this dish - and it was easily the most expensive cheese I ever bought in my life XD
First, gather your ingredients:

Frying off meat and onions together. Also pictured is the roux (flour and fat cooked together) to make the cream sauce.
My boyfriend shredded the cheese for me. It was a semi-soft cheese, like a mozz, with a mild salty flavor. Very regional ingredient that is important to Cyprus, so no subs here.

Once the pasta was cooked, the cream sauce thickened, and the meat was cooked through, some assembly happened.
Bake 'til gold 'n' bubbly (to coin a Dolly Parton movie quote).
This was sooo good. Perfectly cooked pasta, rich bechamel, salty, spiced meat, comforting melty cheese - I missed eating pasta during this project, and I loved being reunited.
"It was super creamy..." - my BF, remembering a meal he ate 7 weeks ago.
