5/9-5/10/2022 - East Timor - Country #54

This is the first one that like, really took two days to make.

I can explain, lol.

I looked up on 10 Most Popular Foods in Timor-Leste - PokPokSom and decided to make Authentic Goan Chicken Curry Recipe - Nitha Kitchen (nithaskitchen.com).

Firstly, my boyfriend came over for dinner and we got the ingredients out:

Chicken was marinated in the spices,

and then the base was started with veggies.

The chicken was then added:

Or would be.

Because it was 6:15 PM and BF was like, "How long does the [frozen, because I'm not on top of my ish] chicken cook for?"

"Forty-five minutes," said I; we then let a beat pass between us as we both did a little mental math and realized this would make us very late for our 7:00 PM screening with my brother of Doctor Strange: Multiverse of Madness. "Burger King?" I amended my statement.

"Yep," was the practical answer of the BF; the base was put away and the chicken was put away; we got the Whopper meal deal and got to the movie on time.

The next day, I started back from where we left off:

Chicken into the base.

See these spices were added in (thanks for the spice plate, Jess!)

Cooked it down:

And here is the moneyshot!

It tasted like curry, lol. I'm not the biggest curry fan, but it was tenderly cooked, nice and slow and authentic with the ground coriander. BF loves curry, so he enjoyed the leftovers, lol.

Country stats:

Day(s) made: 5/9-5/10/2022, Monday-Tuesday

Day post made: 6/30/2022, Thursday

Would I make it again? 7/10, maybe not, I'm not the biggest curry person, but I wish I was, because it smelled sooo good.
