We're back in the Islands - and there's more dessert - I LOVE IT.
So, I googled 'fijian recipes' and found this: Fiji Custard Pie Recipe – PacificIslandRecipe.com. Which worked well, as it was also Pie Week for the St. Jude's Baking Challenge. Two birds with one stone!
First, cream your butter, sugar, eggs, and flour together to become a batter/dough for the crust. It was like a cake and a cookie combined:
Next, I boiled a custard, as you do - a mix of....British? custard powder, milk, and sugar:
On top of the pie and in a MONEYSHOT!!! That's it!!!
It was a fun experience - crumbly, short, and not too sweet - reminiscent of a ladyfinger. The custard was slightly eggy - which was weird, since there were no eggs in it. Overall, it was different from other pies, and I liked it!
