I googled "ghanian recipes", saw jollof rice, and ran with it.
I started this recipe the morning I started at my new job. I'd gotten fancily dressed and put on pretty makeup - then decided since I had some time, to get a quick start on dinner so I could finish it up when I got home and then hang out with my BF after. The good part was that dinner was started; the bad news was that the cooking onion made me so teary I basically cried off all my makeup. Not great. But I wasn't late, so it wasn't life-threatening or anything.

I sure puree a lot of vegetables around here. Anyways, you cook it all down and cry off your makeup before your first day of work because of the onion gas - and then you let it cool and use it later when you come home from a fabulous first day at your new job.
Add more liquid, rice, and veggies - cook 'til done.
And I forgot to take a moneyshot, lolz.
The rice was savory, rice and full-flavored. It was soooo greasy but like, in the best possible way.
