This is the country that took the most time to make - bar none.
I googled 'guyana foods' and found Aunty Rita's Guyanese Garlic Pork (With Chicken and Beef Options) - Metemgee. I've never pickled anything in my life and I was ready for it!
Starting on Sunday, July 10, I did this part (this recipe called for this to pickle about 3-4 days max; we ended up not doing that, of course).
First, gather your ingredients (including fresh thyme from your parents' garden :))
Rinse the pork in some white vinegar...
Put almost everything in the blender to pulse...
Drain the pork; then, layer the pork with veggie puree, more white vinegar, and the thyme stems. Put a super-tight lid on it...
And let it pickle until you want to cook it

Cook off the drained pork in the air fryer until cooked through and I served it on a huge tabbouleh bed.
So, this was fun and different. The pork was super acidic and chewy, sharp against the fresh veg. But I will not lie. Between the greenery and the chewing, I felt like a cow chewing her cud, lolz.
