It's not New Guinea. It's the older Guinea.

Recipes & Cookbooks - Friends of Guinea is the website where I found my Guinea food - Poulet Yassa (chicken, as you shall see) and Hibiscus Tea.

First, gather your ingredients:

The chicken and ingredients get cut up and put in the fridge to marinate - a LOT of lemon juice is used here.

Then it gets sauteed IN the marinade until it is all cooked.

I boiled the hibiscus flowers with sugar and water and then strained off the flowers. You're supposed to use dried flowers, like DRY dry, but I so happened to have the dry flowers full of sticky sugar, so I used those.

Ain't it just the best-looking picture you ever did see? Lolz

I served the chicken with quinoa. It was VERY sour from all that lemon juice - but that lemon juice also made it very tender.

The hibiscus water ended with a very slight hibiscus taste - it was too sweet.
